市場上出現(xiàn)一種以液化天然氣灼燒肉制品去毛手段，該去毛方法本質(zhì)是利用高溫火焰燒制去毛，同時會燒焦肉體，極有可能產(chǎn)生苯并芘（benzopyrene）等致癌物質(zhì)。本課題以用液化天然氣明火灼燒表皮去毛的豬肉制品作為被檢測樣品，利用熒光分光光度法檢測樣品中苯并芘含量，檢測結(jié)果與國家限定標(biāo)準(zhǔn)對照，從而評價此種豬肉制品去毛加工方法對人體的危害。實驗結(jié)果表明：在燒制過的肉制品中，大部分的苯并芘產(chǎn)生在燒焦的表皮上，其中苯并芘含量高于食品衛(wèi)生標(biāo)準(zhǔn)（GB7104- 94）規(guī)定的肉類食品中苯并芘含量的最高允許濃度5μg/kg。利用有效的清理方法，能去除燒制過的肉制樣品表皮上的燒焦物質(zhì)，使肉制品中的苯并芘含量低于5μg/kg。
