“養(yǎng)生大師”為什么愛綠豆?Comments>> | Tags 標簽:原創(chuàng), 炎癥因子, 綠豆 云無心 發(fā)表于 2010-05-31 13:42 綠豆是綠色的,現(xiàn)在卻莫名其妙地“紅”了。在“養(yǎng)生大師”張悟本的“養(yǎng)生理念”當中“綠豆煮水”是最要緊的金科玉律。它真如“大師”所說有神奇效用嗎?“大師”沒有提供什么有意義證據(jù)來支持他的“療法”,也就無法對大師的理論進行評判。這里,我們來介紹一下現(xiàn)代食品科學對于綠豆的了解。 干綠豆的纖維素含量高達16%,這對于纖維素攝入量普遍不足的現(xiàn)代人尤其有意義。它的脂肪含量很低,還有較多的蛋白質(zhì)。在食品學上,有人用營養(yǎng)分數(shù)來綜合評估一種食品的“營養(yǎng)價值”,滿分5分,綠豆的得分是4.2分。 不過,綠豆遠不是一種“非常好”的食品。它含有大量碳水化合物,所提供的熱量中來自碳水化合物的占了70%以上。對于營養(yǎng)均衡的要求來說,比例高了一些。它的蛋白質(zhì)含量雖然比較高,但是氨基酸組成跟人體需求不夠一致,所以單獨滿足人體需求的能力就差了一些。它在“總體營養(yǎng)”指標上的4.2分,跟大米、面粉比算很好了,不過跟許多蔬菜的5分相比,就相當一般了。 當然,人們對綠豆的追逐并非因為“營養(yǎng)”,而是“大師”所說的“養(yǎng)肝解毒”。類似的“傳統(tǒng)療法”通常很難通過現(xiàn)代技術(shù)的檢驗。在少量關(guān)于綠豆提取物、蛋白水解物的研究中,結(jié)果也并不太理想,要么是效果不明顯,要么是其作用并非綠豆所獨有,綠豆也并不比其他食物更好。 在有一些評價體系中,綠豆甚至是“不良食品”。考慮到人體的健康狀況常常與炎癥反應有關(guān),所以食物成分對炎癥的影響就成了現(xiàn)代食品營養(yǎng)研究中的重要領(lǐng)域。任何一種食物都是由很多種成分構(gòu)成的,有的成分會引發(fā)炎癥,有的成分會幫助抗炎。當有助發(fā)炎的成分占了上風,就可能不太利于健康;當幫助抗炎的成分占了上風,就有利健康。有人據(jù)此設(shè)計了一個“炎癥因子”(IF)系統(tǒng),對食物中每一種成分引發(fā)炎癥與抗炎能力進行加權(quán)計算,得出一個數(shù)值來描述這種食物對于人體炎癥反應的影響。當IF是負值,表示這種食物有助發(fā)炎,數(shù)字越小越不利于健康;反之,正值結(jié)果就是有利健康的。我們?nèi)粘3缘氖澄铮琁F值有正有負,合理的食譜應該使每天所吃的各種食物產(chǎn)生的總IF值大于50。按照這個指標,100克綠豆的IF值是-78,恰恰屬于“不好”的范圍。同樣重量的葵花籽是38,各種白菜類蔬菜一般有幾十的正值,胡蘿卜則高達131。 類似的食物評價體系還有不少,每個體系評估的側(cè)重點也各不相同。IF只是試圖描述食物與炎癥的關(guān)系,從而為設(shè)計食譜提供一個參考,它本身并不能表示一種食物是“好”還是“不好”,也沒有得到廣泛的認同和使用,只不過是“一家之言”。不過,通過IF的概念以及綠豆得分與其他食物的比較,足以說明綠豆只是一種平常的食物罷了。 |

Copyright 2007 Institute of Food Technologists KEYWORDS antioxidant activity • essential fatty acids • minerals • mungbeans • tocopherols ABSTRACT ABSTRACT: Seeds of 4 cultivars (M-1, M-6, NM-92, and NM-98) of mungbean [Vigna radiata (L.) Wilczek] were investigated for proximate composition, antioxidant potential, fatty acids, tocopherols, and minerals profiles. Hexane-extracted seed oil content of the investigated cultivars of mungbeans ranged from 1.20% to 1.56%. Mungbean seeds were found to be a rich source of protein (20.97% to 31.32%). The contents of Fe, Cu, Mg, Na, K, Ca, and Zn were found to be 105.8 to 190.9, 4.8 to 6.3, 48.6 to 51.7, 382.6 to 562.7, 11.6 to 18.8, 359.2 to 482.9, and 24.9 to 47.2 mg/kg, respectively. The mungbean seeds contained linoleic acid in the highest amount, 340.5 to 465.7 mg/100 g of dry seed, followed by palmitic, oleic, linolenic, stearic, and arachidic acids: 278.1 to 401.2, 212.6 to 293.5, 188.7 to 236.8, 135.5 to 168.4, and 22.8 to 24.5 mg/100 g of dry seed, respectively. The seeds were found to be a rich source of tocopherols (α, γ, δ) ranged from 1.1 to 10.1, 60.7 to 80.9, and 4.6 to 11.2 mg/kg, respectively. Methanolic extracts of the seeds of the mungbean cultivars exhibited a good antioxidant activity as determined in terms of measurement of total phenolic contents (TPC) (0.62 to 1.08 g/100 g of dry matter), percent inhibition of peroxidation (49.8% to 89.2%), reducing power (1.19% to 1.45%), and bleaching β-carotene. The results of the present analytical study revealed these 4 mungbean cultivars to be a potential source of essential fatty acids, antioxidants, minerals and protein, all of which are linked with positive health benefits. |
