1.由于啤酒風味物質組分的復雜性,對啤酒風味的物質基礎研究顯得越來越困難,通過個別的有效成分或指標性成分的分析與控制,很難確切評價啤酒與該部分成分的直接相關性. 2.為了探索啤酒風味特征與物質的相關性,以及評價不同品牌、不同酒度和原麥汁濃度的啤酒特別是啤酒內在物質的均一性，即風味的一致性,以便更好地控制啤酒的質量。 3.近十余年來,指紋圖譜分析技術應用于中藥和天然藥物質量控制研究在國內外已得到很好開展,并成為一種新的突破口和發(fā)展趨勢. 4.中藥指紋圖譜是一種綜合的、宏觀的和可量化的整體評價手段,目前已被中國國家藥典委員會采用,用于整體、模糊評價中藥不同來源、不同批次之間的物質成分群的構成的一致性情況,這種一致性的客觀評價指標由相似度來進行表達. 5為了便于啤酒指紋圖譜技術的推廣和實施,本文研究一種相似系統理論的研究啤酒風味指紋圖譜的系統化學計量學分析方法，通過Microsoft Excel來進行相似度計算的簡便易行的方法,可以同時得到目前比較通行的各種相似度計算方法的結果,以便于比較。 |
