水產(chǎn)品腐敗變質(zhì)的原因主要是水產(chǎn)品本身帶有的或貯運過程中污染的微生物，在適宜條件下生長繁殖，分解魚體蛋白質(zhì)、氨基酸、脂肪等成分產(chǎn)生有異臭味和毒性的物質(zhì)，致使水產(chǎn)品腐敗變質(zhì)，喪失食用價值。這不僅造成巨大的經(jīng)濟損失，而且威脅到人們的生命健康。 One mainly reason of aquatic product spoilage is microbial which contaminate of aquatic products itself with or in the process of storage and transportation, In appropriate conditions, they can growth breed, decompose protein, amino acid, fat and other components and produce odors and toxic substances, causing aquatic product spoilage, loss of food value. This not only caused huge economic losses, but also a threat to the life and health of the people. |

| The aquatic product spoilage is mainly due to the presence of microbial in the aquatic products themselves or microbial contamination during the process of storage and transportation, which grow and proliferate under appropriate conditions. They decompose the fish proteins, amino acids, fats and other components and produce odor and toxic substances, causing aquatic product spoilage and loss of food value.
