因?yàn)殪o電場(chǎng)是一個(gè)具有矢量及能量特征的概念，故而產(chǎn)生的作用效果同時(shí)受時(shí)間與場(chǎng)強(qiáng)2 個(gè)條件影響。經(jīng)過試驗(yàn)發(fā)現(xiàn)，通過4 組不同劑量的高壓靜電場(chǎng)對(duì)鲅魚的處理，結(jié)果表明，4 組不同劑量的高壓靜電場(chǎng)對(duì)鲅魚的保鮮效果均好于對(duì)照組，表明利用高壓靜電場(chǎng)延長(zhǎng)鲅魚的貨架期是可行的。另外，試驗(yàn)結(jié)果還表明不同劑量的高壓靜電場(chǎng)保鮮鲅魚的效果不同，采用較高的電壓和處理時(shí)間，對(duì)鲅魚的保鮮效果更好。雖然靜電場(chǎng)保鮮果蔬的研究在國(guó)內(nèi)外早有報(bào)道，但本試驗(yàn)研究高壓靜電場(chǎng)在鲅魚保鮮方面的影響是首次的探索性試驗(yàn)，在國(guó)內(nèi)外尚無報(bào)道，所以缺乏全面系統(tǒng)的判斷。并且在上述試驗(yàn)結(jié)果中，其電壓僅采用30和45 kV 2 種電壓與10和20 min 2 種時(shí)間，所以，還有待于進(jìn)一步試驗(yàn)研究，才能得到證實(shí)。 Highvoltage electrostatic field (HVEF) is a concept of vector and energy characteristics, its effect on samples are affected by treating time and treating voltage. In the experiments, Spanish mackerel were treated by HVEF in 4 groups of different dose, the experiments results has shown all 4 groups of different dose of HVEF can delays the spoilage of Spanish mackerel and extend storage time, which showed that using HVEF to extend shelf life of Spanish mackerel is feasible. In addition, the experiment results also show that the Effect degree of HVEF on Spanish mackerel is different by different dose, Spanish mackerel were treated by higher voltage or longer time, the preservation effect is better. Although using HVEF treated fresh fruits and vegetables have been reported, the usefulness of HVEF in preserving aquatic products freshness was explored for the first time. so it is lack of comprehensive and systematic judgment. At same time, in the experiment, Spanish mackerel were treated by HVEF only by 30 and 45 kV, and the treated time is only 10, and 20 min, therefore, it need be confirmed by further experiment. |

| The concept of high-voltage electrostatic field (HVEF) is characteristic as vector quantity and energy, thereby exerting its effects simultaneously influenced by treatment time and the field strength. In this study, Spanish mackerel were treated by HVEF with four different dosages. The results showed that all the four dosages of HVEF were able to delay the spoilage of Spanish mackerel and extend the storage time. This indicated the feasibility of using HVEF to extend shelf life of Spanish mackerel. In addition, the results also showed that the effects of HVEF on Spanish mackerel varied by dosage, with better preservation effect under higher voltage or longer time. Although the use of HVEF treatment in fresh fruits and vegetables preservation was documented, this is the first report exploring its potential in preserving aquatic products, hence devoid of comprehensive and systematic evaluation. Spanish mackerel were treated with HVEF only at two voltages (30 and 45 kV) and two time points (10 and 20 min) in the experiment; hence it remains to be verified in further studies |
