| 大豆蛋白的熱穩(wěn)定性較差，這不僅與加熱溫度有關，也與加熱時間有關。實驗結果表明溫度越高，加熱時間越長，廢水中的大豆蛋白性能改變越大，其中大豆蛋白的溶解度變化明顯，當溫度為65 oC，加熱時間為6 h時大豆蛋白溶解度最小，其最小值為0.189 g/（100 g溶劑）。綜合溫度對大豆蛋白溶解度以及溶液粘度的影響，泡沫分離大豆蛋白工藝中選擇溫度為50 oC是合理的。 |

The poor thermal stability of soybean protein, not only with the heating temperature, heating time. The experimental results show that the higher the temperature, the longer the heating time, the larger the change in performance of the soy protein in the wastewater, wherein the soy protein solubility changes, when the temperature of 65 oC, the heating time was 6 h minimum solubility of soy protein, its minimum 0.189 g / (100 g solvent). The influence of the consolidated temperature on the solubility and solution viscosity of the soybean protein, the foam isolated soy protein process temperature of 50 oC is reasonable. |
