摘 要:本文以花椒籽為原料,以此對(duì)花椒籽進(jìn)行預(yù)處理、壓榨、精煉,在課題組基礎(chǔ)上,對(duì)樣品酸價(jià)、過(guò)氧化值、磷含量、水及揮發(fā)性物質(zhì)含量進(jìn)行測(cè)定。通過(guò)單因素實(shí)驗(yàn)考查了精制溫度、時(shí)間、壓力、流量等因素對(duì)精制花椒籽仁油出油率的影響,實(shí)驗(yàn)結(jié)果表明:最佳精制溫度為40℃,精制時(shí)間為6h,精制壓力為25Mpa,精制流量為80Pv。在此條件下,壓榨花椒籽仁毛油的精制出油率達(dá)到80.04%,經(jīng)過(guò)堿煉精制的樣品酸價(jià)為1.3(KOHmg/g),過(guò)氧化值為0.12(g/100g),磷含量為1.0(mg/100g),含水量及揮發(fā)性物質(zhì)為1.20(g/100g),油脂色澤澄清透明,感官品質(zhì)優(yōu)良達(dá)到國(guó)家食用油標(biāo)準(zhǔn)。 關(guān)鍵詞:花椒籽仁油 超臨界CO2 精制 |
