摘 要：本文以花椒籽為原料，以此對(duì)花椒籽進(jìn)行預(yù)處理、壓榨、精煉，在課題組基礎(chǔ)上，對(duì)樣品酸價(jià)、過氧化值、磷含量、水及揮發(fā)性物質(zhì)含量進(jìn)行測定。通過單因素實(shí)驗(yàn)考查了精制溫度、時(shí)間、壓力、流量等因素對(duì)精制花椒籽仁油出油率的影響，實(shí)驗(yàn)結(jié)果表明：最佳精制溫度為40℃，精制時(shí)間為6h，精制壓力為25Mpa，精制流量為80Pv。在此條件下，壓榨花椒籽仁毛油的精制出油率達(dá)到80.04%，經(jīng)過堿煉精制的樣品酸價(jià)為1.3(KOHmg/g)，過氧化值為0.12(g/100g)，磷含量為1.0(mg/100g)，含水量及揮發(fā)性物質(zhì)為1.20(g/100g)，油脂色澤澄清透明，感官品質(zhì)優(yōu)良達(dá)到國家食用油標(biāo)準(zhǔn)。 關(guān)鍵詞：花椒籽仁油 超臨界CO2 精制 |
