各位大神：求論文摘要翻譯 牛干巴是云南省民族傳統(tǒng)特色腌臘肉制品。目前，牛干巴無(wú)國(guó)家標(biāo)準(zhǔn)、行業(yè)標(biāo)準(zhǔn)和地方標(biāo)準(zhǔn)，各企業(yè)的技術(shù)指標(biāo)參差不齊，且沒(méi)有將三甲胺氮作為評(píng)價(jià)牛干巴優(yōu)劣的指標(biāo)。本文是牛干巴地方標(biāo)準(zhǔn)中的一部分，著重對(duì)其感官指標(biāo)、亞硝酸鹽和三甲胺氮做出研究，同時(shí)參考相關(guān)腌臘肉制品的國(guó)家標(biāo)準(zhǔn)及牛干巴企業(yè)標(biāo)準(zhǔn)，確定了牛干巴的感官指標(biāo)，亞硝酸鹽含量不大于10mg/kg，三甲胺氮含量不大于20mg/kg作為云南省地方標(biāo)準(zhǔn)的參考，并探討了這些指標(biāo)作為地方標(biāo)準(zhǔn)的依據(jù)、必要性和合理性。 |
